Performance mode has a lower internal resolution, which can lead to a slightly softer overall image, more breakup on reflections, and more stair stepping on shadows. Quality mode also has more dense foliage and improved volumetrics. Fortunately, performance mode maintains 60fps a vast majority of the time (at least in the early portions of the game) and many other graphical settings like draw distance are a match. Base PS5 has the same modes with seemingly the same graphical/framerate breakdown, aside from slightly lower internal resolutions compared to the equivalent mode on Pro.
